Ingredients

1 cup Oat Flour (or you can grind whole oats)
1 tablespoon ATHANASE®
125ml Honey
Grated Lemon
1/2 teaspoon Vanilla Extract
1/2 teaspoon Baking Powder
One teaspoon of Baking Soda
A pinch of Salt
Fresh Blueberries

Directions

Preheat the oven to 200 degrees
Add the Oat Flour, ATHANASE®, Honey, Lemon Zest, Vanilla, Baking Powder, Baking Soda and Salt
Mix everything very well until you have a thick dough.
Make all the cookies you want
Create balls and flatten them on the baking tray.
Add blueberries and bake them well for 10 or 12 minutes.
Let the oatmeal cookies cool and then carefully remove them.
